Vegan banana bread // Recipe

I’m not a big fan of bananas. There’s something about the texture that I just really hate. But I do like using them to bake. Whenever we have really ripe bananas that no one wants to eat, I bake them into a banana loaf. Super easy and really good!

Ingredients

  • 5-6 ripe bananas
  • 250 grams of flour
  • 100 grams of sugar
  • 1 tablespoon of baking powder
  • cinnamon
  • 75 grams oil

You can also add in a little (non-dairy) milk but I never bother.

If you want, you can also add other things to the bread, such as raisins, nuts or chocolate powder!

How to make it

  1. Mash all the bananas. You can make them as smooth or as chunky as you like.
  2. Add in all the other ingredients and mix well
  3. If you’re adding something extra, put that in now
  4. Prepare the loaf pan
  5. Pour batter into loaf pan
  6. Bake for about 50 minutes at 180°C. Check to see if the loaf is ready by poking it in the middle with a toothpick. If it comes out clean, your loaf is ready.

Banana muffins: To make muffins, line a muffin tin with paper liners and fill each cup to roughly 3/4 full. Bake for around 20 minutes.

    Love banana bread. My wife and daughter do a big production so we can freeze some. Always hits that spot when you need a little something in the evening.

    This sounds delicious! I haven’t ever tried a vegan version of banana bread, but definitely would give it a shot over the holidays!

    I love banan muffins. I usually add nuts to mine and it taste heavenly. But never make the bread which is pretty much the same process. I need to grab a pan at the local store.

    You know, I have a container of frozen ripe bananas sitting around just for this purpose. I myself am allergic to bananas (only if I eat them). MY kids and husband on the other hand love love love bananas. I have some pecan lying around so I may add those as well. Does it matter what type of oil you use?

      I usually just use a plant-based oil but it does’t really matter. You can also melt some butter and use that instead of oil!
