Vegan coffee-flavoured cupcakes // Recipe

A few weeks ago, I spent an entire day in the kitchen baking things, among which an apple pie and pumpkin loaf. I also made coffee-flavoured cupcakes. Possibly my favourite thing I ever made. So, today, I’m sharing how to make them. They’re really easy and take less than 40 minutes to make. The more coffee you add, the stronger the flavour. Not meant for kids. Only for exhausted au pairs and mums.


For the cupcakes:

  • 2/3 cup of coffee
  • 250 grams of flour
  • 200 grams brown sugar
  • 1 teaspoon baking powder (or more if you want giant cupcakes)
  • 1 cup of soya milk
  • 80 ml of olive oil
  • cinnamon

For the frosting:

  • 300 grams icing sugar
  • 75 grams olive oil
  • 1/4 cup of coffee
  • 2 tablespoons ofย  soya milk
  • 1 teaspoon of vanilla extract

How to make them

Mix all of the ingredients together and bake in the oven for about twenty minutes at 180ยฐC.

Wait for the cupcakes to cool before putting on the frosting.

    I really enjoy the smell of coffee but can not stand the taste of it. That being said I bet the house smells amazing when you’re cooking these muffins

    I am not a fan of coffee. But I know several people who are. I can imagine that eating one of those may easily replace that cup of java they need in the morning.

      I would never replace my morning coffee with a cupcake but if you add in enough coffee, Iโ€™m sure youโ€™d get the same kick out of these ๐Ÿ˜‰

      I have a french press that I used to make the coffee but you can use whatever you want! I recommend making it strong ๐Ÿ™ƒ
